Place a bag of Yayita's Soy Ceviche into a bowl and pour 4-4 1/2 cups of water, let it stand for 20 or more minutes. While the soy hydrates, finely chop the onions, tomatoes, cilantro and chile (if desired) into pieces, not too big not too small, then pour the juice of one large lemon or two small add salt and pepper to taste, chop the cilantro and let stand while moisturizing Yayitas soy meat.
Drain water out of the bowl with soy.Strain excess water from soy (Squueze the soy to remove excess liquid.)
In a large mixing bowl, combine soy, chopped tomatoes, chopped onions and chopped cilantro, chilles can be added to taste. Mix until well combined. Stir in lemon juice or lemons and salt (to taste). Place bowl in refrigerator for 20 or minutes, the longer, the better, this way the lemon and veggies marinate the soy.
